It's been a while

Well...I tried to blog but it's really hard when you know no one is reading and no one really cares. So, I quit. But, I read blogs all the time...seriously...everyday, and I decided that it doesn't matter who reads it. It feels good just to put my thoughts out there. So, I'm back. I'm going to document my 101 in 1001 just for me. I would love to have others join in, but if not...it's ok.

So, whats been going on? Well, I have recently won 3 blog giveaways. I will do a separate post for those though. My newest addiction is Bodyrock.tv. It is AMAZING. Zuzana is unbelievable. I have never seen someone so dedicated to fitness and healthy living. I am in love with the workouts. They are challenging, but who doesn't have 15-20 min a day to give to themselves. That's what I love about it. No excuses. Check it out. No...TRY it out!

So excited!!

Well... this next one is not on my list but it is something I have been wanting to do for a while now. GET A NEW JOB. I don't hate my current job (Beverage Department Head at World Market), but it is not what I dreamed of doing with two degrees.

I haven't begun my new job, but I have accepted the position and start in a week! I am just so excited to be moving on with my life and career. My new company is a company that is making a difference in the energy industry and it seems amazing! I have really enjoyed everyone I have met so far! Can't wait....

Oh my...I've been behind!

Hello everyone! ( or anyone..lol)

Well, I have been behind and not updating recently. woopsie! I have not, however, been behind on my list. I've been working hard to try new things and complete my list. One of the things I did was cook yet another new recipe. Now, here's the thing, I love to cook. This is one thing on my list that I knew I would complete easily. I also love to cook healthy meals. I am very conscious of my eating habits and I just love the taste of healthy, good-for-ya food.

We put shredded turkey on it cause we are meat kinda people.

But, it was really nice and light for a summer meal (We have been in the mid 90's for a while now - whew!).

Anyways, try it cause it was amazing!

Can you fry anything?

Yesterday answered this question for me - YES! I went to downtown Spring, TX with my friend, Jackie, and we came across a stand with fried everything! I couldn't believe it. From funnel cakes to fried oreos..it was amazing (and not in a good way).

I decided to take the plunge and try two things I've never had. Twinkies and fried snickers. Oh my...delicious at first....and then my tummy started hurting because I never eat anything fried.

There they are... The small one is half of the fried snickers and the big one is the fried twinkie. oh my. Biggest sugar rush EVER! But, it was fun to say I tried it and now I never have to again. lol.

great dinner & wine = 2 more down!

Last night Ry and I decided that we were sick of eating out and that we would make dinner for my parents. Well, we couldn't decide what to make so we just opened a magazine and pointed to a random recipe. Well... we picked a WINNER! It was so good! Here's what we made:

Linguine with Spicy Shrimp (from June 2010 issue of Cooking Light)

8 oz uncooked linguine
2 tbsp butter
1/2 cup chopped onion3 garlic cloves, chopped
2 plum tomatoes, chopped
1 lb. peeled/deveined shrimp1 1/2 tsp Cajun seasoning
1/2 tsp red pepper flakes
pinch salt
1/2 cup half-and-half chopped flat leaf parsley

So first - cook pasta.

While it's cooking, melt butter in large skillet over medium-high heat.
Then add onion and saute 3 minutes.
Then add tomatoes and garlic and saute for 2 minutes, stirring constantly.
Sprinkle shrimp with Cajun seasoning, red pepper and salt.
Add to pan and saute until shrimp are done.
Remove from heat and add half-and-half.
Pour mixture over pasta and sprinkle with parsley.

There's the final product. Y'all - it was so easy! Ry just kept saying the whole time how amazing it is. Seriously...try it! Also, it's really healthy! The magazine says it's 436 calories in one serving (recipe makes 4 servings). We added more shrimp and less pasta though.

I know y'all don't know because I'm really new at all this, but we love wine and beer! With this meal, we had Schmitt Sohne Riesling. I'm not a big white wine person but I was pleasantly surprised. It went well - a nice balance to the spiciness of the food. The meal brought out a bit of sweetness in the wine, while on it's own there was nice acidity. I liked it either way. I would definitely buy another bottle.

So - we tried a new recipe and a new wine! Both were great. 2 more down...

Hello everyone!

Well... I have been reading blogs for years now. I came across one that really caught my attention. It had a list of goals that this person wanted to complete. I did a little searching and found that many people did 101 in 1001 days. I thought...why not me? So here I am. I plan to record my journey in completing these goals and hope to have a lot of fun doing it.

Starting this blog was goal #1 completed. yay!

I look forward getting know whoever reads this and telling y'all (I'm Texan.) more about me.
